Serves: 3-4 meals for 2 people/6-9 people
Time: 10 minutes for the marinade
1kg lamb/chicken/pork/beef mince
1 white/brown onion
1 red onion
6 garlic cloves
2 teaspoons salt
1.5 teaspoons ground cumin
1.5 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon ground red chilli
2.5 teaspoons madras paste (I use this one, if you don’t have any paste, feel free to double up on the dried spices and add a couple of teaspoons of olive oil to the mix)
- Add the onions, garlic, salt and spices to your food processor and give the whole lot a whizz around until it’s a smooth paste.
- Mix your paste into your mince and you are ready to rock and roll with your favourite mince recipes.
I’ve used this marinated mince to make a whole range of different dishes from burgers, kebabs, koftas or just simply frying off in a pan and eating with bread or even topping some fries! You can add beans and tinned tomatoes to make an indian spiced chilli or add a bunch of vegetables and make bolognese with a kick! The possibilities are endless…
