Spicy Vegetable Bread Parcels

A delicious spicy treat which is perfect hot or cold. Eat it for lunch, dinner or as a snack!

  • 2 medium sized Maris piper potatoes peeled and chopped into 1cm cubes
  • 150 g frozen mixed vegetables
  • 4 garlic cloves
  • ½ green chilli or more/less per your taste
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp garam masala
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 medium sized onion finely chopped
  • Fresh coriander optional
  • 1 loaf Fresh white bread any that you like


  1. Add the olive oil to a pan and add your potatoes once it’s heated up, pop a lid on and steam the potatoes until starting to go tender.
  2. Add the garlic, chilli, dry spices, salt and frozen mixed vegetables plus a splash of water to create some steam. Pop the lid on again and allow to cook for about 10 minutes until the potatoes and vegetables are cooked through and tender.

  3. Once all the vegetables are soft, add the chopped onions, optional coriander and juice of a lemon and give everything a good mix together, allow this to cool down completely

  4. Cut the crusts off the bread you are using, and get a bowl ready with some milk (or water to keep it vegan) brush the edges of your bread with your liquid, this is to help it stick together, add your filling (mine had around 2 teaspoons of filling) and either fold over your piece of bread or put the top piece on and squeeze together your edges. If you are using fresh bread this will be really easy

  5. Once you are ready to cook, preheat your oven to 200 degrees (fan) and either brush the parcels with melted butter or a couple of sprays of olive oil

  6. Put your parcels on a baking tray and cook for about 15-20 minutes until golden and crispy all around.

  7. Serve with your favourite condiments!

Recipe Notes

If using your Instant Pot, add the potatoes, frozen vegetables, garlic, chilli and dry spices apart from garam masala to the pot and give everything a good mix around. Add 1 quarter cup of water and set your Pot to manual for 2 minutes. Then quick release and add the rest of your ingredients and mix really well together.
