  • 1 tin Sweetcorn I use a 198g tin
  • 1 Red onion Finely chopped
  • 2 Carrots Finely chopped
  • 1 tbsp Lemon Juice
  • 0.5 tsp Chilli powder/cayenne pepper/paprika
  • 1 tsp Ground cumin
  • 0.5 tsp Sea salt/to taste
  • Handful Coriander Optional


  1. Just 1 thing to do with this recipe, mix together all your ingredients! 

  2. Enjoy straight away or leave to marinate for a few hours in the fridge.

Recipe Notes

If you want to use frozen sweetcorn for this recipe give it a steam/boil it until tender and then use as per the recipe. 

It'll also work great with BBQ'd corn on the cob, just cut off your kernels add use as stated.
