Servings: 2 people
Time: 15 minutes 
For the Spaghetti:
200g fresh egg spaghetti/linguine
100g n’duja sausage (I buy this one)
150g sliced red onion
8 sliced garlic cloves
100g baby spinach
1 tablespoon extra virgin olive oil
Parmesan (optional)
For the Garlic Bread:
1 large tortilla wrap
15g softened salted butter
2 garlic cloves, crushed
Cracked black pepper to taste
1/2 teaspoon dried parsley


  • Preheat the oven to it’s highest setting with a pizza stone or upturned tray
  • Get a big pan of boiling water on and add a big pinch of salt
  • In a separate pan, add the olive oil, garlic and onions on a medium heat to help the onions soften a little
  • Once the garlic and onions soften slightly, crumble up the n’duja and mix it through, it will melt down slowly turning a bright red colour
  • Add the spinach to the n’duja mix and turn down the temperature to a slow simmer
  • Meanwhile, add the spaghetti/linguine to your boiling water
  • Mix together all the ingredients for your garlic bread and spread evenly all over the tortilla
  • Pop this into onto your pizza stone/upturned tray for approximately 3 minutes
  • Once your spaghetti/linguine is cooked to your desired consistency, drain, reserving half a cup of the cooking water and add it to the n’duja mix, if required, add the pasta cooking water to loosen up a little.
  • Serve with grated Parmesan and the crispy garlic bread
